Braised Pork Knuckle


Ingredients :

Pig's trotter  1
Dried chili peppers  3
Sichuan peppercorns  2 teaspoons
Star anise  3
Bay leaves  2
Cinnamon  a small amount
Scallion stalks  several
Light soy sauce  2 tablespoons
Dark soy sauce  4 tablespoons
Oyster sauce  3 tablespoons
Shaoxing wine  2 tablespoons
Rock sugar  2/3 piece
Water  about 150ml


  1. Place the washed and chopped pig's trotter in boiling water and blanch for 5 minutes. You can add some scallion stalks or ginger slices to remove any unwanted odors.
  2. Remove the pig's trotter from the boiling water and immerse it in ice water to cool. Rinse it to remove any impurities.
  3. Place the Sichuan peppercorns, cinnamon, and star anise in a filter bag.
  4. In an electric pressure cooker, place the pig's trotter, light soy sauce, dark soy sauce, oyster sauce, rock sugar, Shaoxing wine, spice bag, dried chili peppers, and bay leaves. Add water and cover the cooker with its lid.
  5. Press “Function” to select "Meat/Chicken" function on the pressure cooker.
  6. Press “Timing” to select cooking time to 35 minutes and Press “Texture” to select the "Over Cook" option (which will make the pig's trotter more tender).
  7. Press the "Start" button to begin cooking.
  8. Once the cooking is complete, stir the ingredients evenly and serve.
